Bengali Pabda Fish Curry(pabda macher jhol) Prep time: 15 mins Cook time: 15 mins Total time: 30 mins   INGREDIENTS Pabda fish:6-7 Oil(mustard) :half cup Chopped onion:2 Whole cumin seeds:1 t spoon Garlic,ginger paste: 1 t spoon each Coriander & cumin powder:1 t spoon each Red chili,garam masala:1/2 t spoon each Chopped tomato :1 Method: Wash fishes & marinate the fish with  salt, turmeric powder and red chili powder for 10 minutes Heat oil in a pan and fry the fish till light golden in colour and keep aside. Temper the same oil with dry red chilies, bay leaves and whole cumin seeds. Saute for a few seconds. add the chopped onions & fry till color become brown,add garlic& ginger paste and stir fry for 4-5 minutes.   Fish Curry In Coconut Milk(NARKEL MACCH) Ingredients 1/2kg - Fresh fish, cut into slices 1  onion, chopped finely 1 tsp - Ginger paste 2 tsp - Garlic paste 1/2 cup -  Coconut Milk 2 tsp - chilli powder 1 tsp - cumin powder 1 tsp - coriander powder 1 tsp - Turmeric powder A few Curry leaves Salt to taste 2 tbsp - oil (mustard) Green chillies - 2(slit) METHOD  Wash the fish  and fry it in high flame & keep aside. Heat the oil in a pan and fry the curry leaves and onions till golden brown. Add the ginger and garlic paste, chilli powder, cumin powder, coriander powder, turmeric powder, and a little water and fry  for 2-3 minutes. Mustard Kasundi Fish(FISH IN MUSTARD SAUCE)   Ingredients: 3-4 pieces Rohu or any type of fresh water fish 100 gm Mustard Kasundi Sauce 1 onion & 1 tomato finely chopped panchforon- 1 t spoon (mix of 5 spices e.g coriander,cumin , fenugreek seeds, fennel seeds , nigella seeds ) mustard oil 4 t spoon Marination Ingredients: 1 tbsp Turmeric Powder 1 tbsp cumin Powder 1 tbsp Coriander Powder 1 tbsp Chili Powder Salt to taste Method:   Wash the Rohu pieces & marinate with all the ingradients   Heat some oil in a cooking pan     Fry Rohu pieces on low flame& keep aside In the same pan put panchforon , after popping up add add finely chopped onion and tomato&fry it nicely for 2-3 mins  add 1 cup of water. add kasundi(mustard sauce) add fish pieces and allow to cook till the gravy becomes thick. serve hot with hot rice.

Maccher Matha Diye Bandhakopi. (Cabbage with Fish head)   Ingredients 1 fish head ( Rohu or Catla cut into two halves) 1  cabbage finely chopped 1 medium potatoes cut into cubes 1 tomato and 1/2 carrot coarsely chopped 1 tbsp ginger paste 1 tsp. garlic paste 1 tbsp coriander powder 1 tsp. cumin powder 1tbsp chili powder ( you can increase or decrease the amount depending on your spice level) 1 tbsp turmeric powder 1 tsp. panch foron 2  bay leaf Salt Sugar 1 t spoon Garam Masala Mustard oil METHOD Clean and wash the fish head. Rub salt and turmeric powder to it. Keep it for five mins. In a pan  heat oil . Now add the fish head and fry it on a medium heat. Heat some oil in the pan and temper it with cumin seeds and bay leaf. MURI GHONTO(AROMATIC RICE WITH FISH HEAD) Ingredients 1 - head of a large KATLA/ROHU fish 100 gm - raw Govindobhog(small basmoti )  rice 1 tbsp - onoin paste 1 tsp each - ginger and chilli paste  2- bay leaves 2 t spoon turmeric powder  1 tsp - cinnamon, cloves and cardamom ground paste. 4 tbsp -mustard oil  2 tspoon ghee 2 - potatoes, cut into pieces(optional) Method Clean the fish head, rub with 1 tsp of salt and turmeric powder. Heat the pan, add oil, fry the fish heads, keep it aside. Then take another pan add ghee & bay leaves and add washed raw rice& stir for 2 minutes Add the remaining masalas. Fry it in low flame till the oil leaves the masala. ROOPCHAND FISH WITH CORIANDER LEAVES(DHONEPATA MACH) INGREDIANTS Fish: 4 pieces roopchand fish Onion: 1 Garlic paste: 1 tbsp Yogurt: 1/2 cup Coriander leaves: 1/2 cup paste Green chilies: 4-5 tamarind pulp -1 table spoon Salt Turmeric Oil: 3 Tbsp  mustard oil Method:  Mixed  salt and turmeric to the fish and keep aside for at least 15 minutes. wash and make a coarse paste of the coriander leaves with yogurt green chili & tamarind. Very finely chop the onion. Heat oil and shallow fry the fish pieces . Keep the flame medium. Take out and keep aside.
